The first transactions of new tea are beginning to take place in the market.
The teas produced by each farmer are displayed on a tray called a haiken tray and compared.
This is unroasted tea before it is roasted, so it has a fresh, raw flavor. I buy tea leaves while imagining how it will taste after it is finished.
